Chorizo and Bacon Stuffed Dates recipe

Bacon wrapped dates are a classic Tapas dish, and after you try this exciting twist on the savory snack you will understand why! Smoky chorizo is stuffed into sweet dates and wrapped in bacon before being cooked to perfection. The fusion of the flavors makes for a mouthwatering treat makes for perfect Hors d’ourves. You can prep the dates a few hours beforehand and simply place in the oven for the bacon to cook prior to serving.

Ingredients:

  • 4 -6 oz. fresh chorizo sausage, crumbled
  • 1 Tbsp fresh parsley, chopped
  • 12 large Medjool dates
  • 5 slices bacon, cut into halves

Directions:

  1. Preheat oven to 350 degrees F. Prepare cookie sheet by lining with parchment paper. Set aside.

  2. In heavy skillet, cook chorizo over medium heat until browned and cooked through. Drain off excess fat, place in small bowl, and add parsley. Stir gently to combine and set aside to cool.

  3. Pit dates by slicing down the length of the date with a sharp paring knife and prying open date to remove pit. Repeat until all pits are removed.

  4. Stuff each date with 1 scant teaspoon of chorizo. Wrap bacon around each date and overlap ends slightly. Fasten with toothpick and place on cookie sheet.

  5. Bake on cookie sheet 30 minutes until bacon is cooked through and crispy. Serve hot.
