Chorizo and Beans recipe
The spicy and smoky flavors of chorizo sausage bring this bean dish to life!. Ingredients:
- 2 Tbsp olive oil
- 12 oz chorizo sausage
- 1 large bell pepper, seeded and chopped
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tsp ground cumin
- ½ tsp chipotle powder
- 2 (28 oz) cans pinto beans with their liquid
- ½ lb shredded cheddar cheese
- ¼ lb queso fresco (mexican white cheese) crumbled
- 1 (16 oz) container sour cream
- 10 (12 in) flour tortillas
Directions:
In large skillet heat oil over medium heat. Add onion, garlic, bell pepper and heat for 1 minute. Add chipotle powder and cumin and continue cooking over medium heat until onions are just softening.
Add chorizo and cook until browned, about 5 minutes. Add beans and their juice to the mixture and bring to a simmer. Cook 20-30 minutes until warmed completely through and liquid has reduced.
Prepare tortillas by warming in oven. Top tortillas with chorizo and bean mixture, sour cream, and cheese. Serve immediately.
