Chorizo Lentil Stew recipe
A delicious and hearty way to cook lentils, this chorizo lentil stew is an exciting dinnertime choice. Ingredients:
- 1 tbsp olive oil
- 2 cloves garlic, minced
- ¾ lb chorizo sausage
- 3 stalks celery, diced
- 1 onion, diced
- 1 carrot, diced
- 1 c. dried lentils
- 4 c. chicken stock
- 1 (12 oz) can tomatoes or 1 large tomato, seeded, peeled, and chopped
- 1 tsp ground turmeric
- 1 tsp curry powder
- 1 tsp ground cumin
- 1 tsp sugar
- salt and pepper to taste
- sour cream (optional)
- fresh cilantro (optional
Directions:
Heat olive oil in large saucepan over medium high heat. Stir in garlic and onion and cook until aromatic, about 1 minute. Add chorizo sausage and cook until sausage begins to brown, about 5 minutes. Stir in celery and carrot and cook until celery just softens, about 4 minutes more.
Add chicken stock and lentils to pan. Season with turmeric, curry powder, cumin and sugar. Simmer 30-40 minutes or until lentils are tender and liquid has reduced to desired thickness. Add tomatoes and cook for 5-10 minutes more. Season with salt and pepper to taste.
Serve immediately. Garnish with sour cream and fresh cilantro if desired.

Delicious and so easy! Sour cream really adds a great deal to this recipe. Didn't have cilantro but still very good.
This was terrific! I'm not sure if it called for wet or dry chorizo but I used wet that I popped out of the casings. We don't care for curry so I just put extra of the cumin and turmeric. We used the sour cream and fresh cilantro garnish and we think it should be mandatory not optional!
