Chorizo Chicken Rolls recipe
Smoky sausage fills delicate chicken breasts in a sophisticated dinner dish overflowing with hearty flavors and spices. These Chorizo Chicken Rolls are time consuming, but prep them before and place in the oven 40 minutes prior to eating. The delicate flavors of pounded chicken breast, carmelized onions, and smoked chorizo sausage will make this dish and instant favorite. Serve with an avocado salad and a glass of white wine for a well rounded and memorable meal.
Ingredients:
- 2 skinless, boneless chicken breast halves
- ¼ lb chorizo sausage, crumbled
- 2 cloves minced garlic
- ¼ c. chopped white onion
- 1 Tbsp olive oil
- ¼ c. parsley chopped
- 1 tsp paprika
- 1 tsp salt
- ½ tsp black pepper
- 1/4 c. bread crumbs
- Grated Manchego cheese, to garnish
Directions:
Preheat oven to 350 degrees. Prepare a glass baking dish with vegetable oil cooking spray.
In large skilllet heat 1 Tbsp oil. Add chorizo and cook 5 minutes or until it begins to brown. Add onions and garlic and saute until translucent. Place in large bowl, add parsley and stir to combine.
Place breast fillets between two sheets of plastic wrap. Using flat side of a meat mallet pound gently to flatten until very thin.
Lay chicken breasts out and spread with olive oil. Sprinkle with paprika and breadcrumbs. Spread evenly with chorizo mixture. Roll tightly, brush with olive oil, and season with salt and pepper. Place seam side down in prepared baking dish, securing chicken rolls with toothpicks if necessary.
Bake in preheated oven 20 minutes or until chicken has cooked through. remove chicken rolls from oven and slice into 1” thick slices. Pour 1 ½ tsp of oil into a large frying pan and place over medium heat. Gently fry chicken for 1-2 minutes on each side until lightly browned.
Top with grated Manchego cheese and hot sauce, if desired.

Easy to make, and with a great taste. I substituted shredded Mexican cheese for the Manchego, and still tastes wonderful. Highly recommended!
